Banana Pudding Pie and Slice

I LOVE banana pudding.  When I was growing up, it was one of my favorite sweets!  A few years ago, I ran across a great uncooked banana pudding.  I posted the recipe here, and to this day, it is still one of my site’s most visited posts.  I love banana pudding anytime of year, but I think of it as one of the official desserts of summer, so the other day, I decided to make it, but this time, I decided to do something a little different…a banana pudding pie!

Unlike a banana cream pie, which is usually made of a creamy banana filling, this pie is composed of the layers: banana slices, pudding, and whipped topping (plus garnishings).

And apart from being an easy, no-bake recipe, this recipe is also great because the filling recipe is enough to make two pies!  I love recipes that yield two pies, because I can make one for us and I can take the additional pie to a party or give it away to a friend or family member.

Ingredients:

2 graham cracker crusts

Vanilla Wafers (About 30 for 2 regular size crusts, plus additional cookies for garnishing)

2-4 Bananas

2 boxes of Instant Vanilla Pudding

1 8 oz. cream cheese (softened)

1 can sweetened condensed milk

3 cups milk

1 an 8 oz container whipped topping

Directions:

Line the edge of your graham cracker crusts with vanilla wafers. Then thinly slice your bananas and line the bottoms of your crusts with the banana slices.

To make pudding mixture, make sure your cream cheese is softened. (I usually place mine in the microwave for a few seconds.)

Mix the cream cheese, sweetened condensed milk, milk, and pudding mix in bowl, and beat for 2-3 minutes. Fold in about 1/2 of the cool whip, and mix well.

Spoon pudding mixture over the bananas, dividing the pudding equally between the two pies. Next spoon your remaining whipped topping on top of each pie.

Garnish pie with additional banana slices and whole vanilla wafers or vanilla wafer crumbs.

Cover and refrigerate for a couple of hours before serving.
